The chef who trained at New Otani incorporates Fukuoka ingredients, pork bones, and dashi, and offers familiar Chinese cuisine with a twist unique to black and white.
The specialty is “freshly made tofu drinkable raw mapo tofu flowers,” where tofu is made from soy milk in front of customers and finished with hot mapo bean paste.
Furthermore, we have a selection of dishes that can only be enjoyed here, such as “black fried rice,” where you can enjoy the deep richness and aroma of Chinese soy sauce; “deep-fried shrimp with white sauce,” which sublimates shrimp mayo; and “Hakata Wagyu roast beef,” which carefully brings out the flavor of Hakata wagyu that Fukuoka is proud of.
